Seaweed Sauerkraut
Fermented foods are so great for the gut microbiome, and mixing seaweed into them can enhance their benefits. Seaweed contains prebiotic fibres. So it’s a great nutritional combo.
Fermenting foods is an eco-friendly method, as they don’t require the same resources compared with canning or refrigerated food. Modern science still stands by the health benefits, which date back thousands of years. And of course, it’s super tasty stuff too.
Ingredients
- 1 Whole cabbage
- Large pinch of Cornish Seaweed seaweed salt
- Half a bag of Cornish Seaweed Sea Greens, aka Ocean Greens
- Small trimmed cabbage leaf
- Small stone
- Fresh water
Method
Start by grating the whole cabbage into a bowl.
Add a good pinch of the seaweed salt and massage the mixture with your hands, to draw out the juices.
Add half a bag of Sea Greens to the mixture and mix this in with the cabbage.
Once thoroughly mixed in, place into a jar and add a cabbage leaf and stone on top.
Leave to ferment for 2-3 weeks.
