Seaweed Martini

In this martini, Cornish kelp keeps things light and refreshing. It lifts the drink rather than weighing it down, adding a gentle seaside note that sits neatly alongside the crispness of the vodka and the dry, herbal edge of the vermouth.

This one is a creation from our friends at The Headland Hotel. One of the most iconic hotels in Cornwall and dating back to 1897, the kitchen serves up delicious meals, using locally sourced ingredients. 

Cornish Kelp Martini

A fresh, coastal take on a classic. Clean, bright, and quietly complex.

Ingredients
50ml Aval Dor Original Vodka
50ml dry vermouth
3 bar spoons Cornish kelp seaweed (flakes) 
12.5ml gomme

Method
Fill a mixing glass with ice, then add the vodka, vermouth, kelp and gomme. Stir steadily for 20–30 seconds until thoroughly chilled.

Strain into a chilled martini glass.

Garnish with a small skewer of whole kelp, which brings a little extra aroma and a visual nod to the ingredient itself.

Notes
The kelp introduces a subtle, saline freshness that runs through the drink. Not overpowering, just enough to make it feel lighter, cleaner, and distinctly of the coast.
